Fall is around the corner – and that means mushroom season. Local mycologist Joseph Zapotosky is an avid forager of wild fungi, but also knows how to cultivate gourmet mushrooms right in your pantry. Join him at the Culinary Arts Studio on National Mushroom Day, Oct 15, for a quick primer on home cultivation as you build two simple kits to take home, for two different varieties of oyster mushrooms, that can provide years of harvests.

Fresh Bay Leaves! Check Out the Culinary Garden
The BARN culinary arts studio garden is full of herbs, lettuces, and many small tomatoes with larger ones soon to ripen. Sages, basil, shisos, rosemary, and different thymes are abundant. Instructors, please take advantage of them for your classes. Studio folks, if you need a handful for your home kitchen, please help yourself. The beautiful bay leaf tree next to the building is full of fresh leaves — use them now or dry them for use in winter stews and soups.

We’re starting to think about next year’s garden and how to make it more useful and productive for the BARN Culinary Arts Studio community. We’d like to hear your thoughts and ideas about how it could be more supportive of your needs, wants and classes. Anyone who would like to help out occasionally with garden maintenance and watering, contact Bob Ross.
